The meats and cured meats come from Tuscan companies, particularly Maremma, where the animals are raised in the wild or fed with feed produced by the same companies. The cheeses come from the best dairies in the area or are selected by affineurs of the calibre of Parola and Marcomini. Only fresh truffles from Umbria are used.
