The vaults of a 1200s convent create a suggestive and magical environment ready to welcome you. In the heart of San Gimignano, a unique restaurant is hidden, where only meat plays the starring role. Our Josper oven, with its ability to give softness and flavour to every bite and smoked cooking, enhances every nuance of taste. The atmosphere is warm and welcoming, and the colours and lights are sweet and gentle as if to direct your palate onto a path of emotions—the choice of the proper cut, the care in preparation and the reproduction of ancient flavours. The chef carefully chooses the raw materials and, with his sensitivity, expresses culinary mastery in every dish. The recipes are developed with respect for tradition but with the creativity of those who desire to offer something different and exciting—selected from organic farms, cooked and seasoned with care. The selected meats are the protagonists of the menu, shown in raw versions with precious essences and spices or cooked with jasper in a charcoal grill oven.
